Grilled Garlic & Cheese Mushrooms

Time
  • 10 minutes preparation
  • 10 minutes cooking


Ingredients
(for 1 person as a starter/snack)
  • 2 large open cup mushrooms
  • 2 cloves of garlic
  • 60g (2oz) cheddar (or similar) cheese, grated or sliced
  • Salt and pepper


Method
Wipe the mushrooms with a damp paper towel to clean them and remove the stalks (the stalks usually break off easily by bending them).
Place them open side down on the grill rack, drizzle with a small amount of olive oil and season with salt and pepper.
Cook under a pre-heated grill for a minute until the top of the mushrooms is hot.
Meanwhile, peel and finely chop the garlic cloves.
Remove the mushrooms from the grill and turn them over. Sprinkle the chopped garlic inside, add salt and pepper and drizzle with a little olive oil.
Distribute the cheese evenly over the mushrooms, and return to the grill.
Cook under the grill until the cheese is bubbling and golden.
Serve immediately.
